マコモダケの天ぷら

ここ数日、美味しい食材との出会いがラッシュ。毎日秋の味覚を満喫している。
今夜は、マコモダケとヒラタケの天ぷら。新鮮なマコモダケが1本200円弱、ヒラタケは一袋100円。本当に信じられないくらい食材には恵まれた環境。天ぷらなんて絶対家ではやらないと豪語する私だけど、マコモダケが手に入った今日だけは別。揚げたての美味しさを小布施の「蔵部」で知ってしまったのだから・・・。

＜材料＞
マコモダケ、ヒラタケ、天ぷら粉、油、レモン、塩（今回はミネラルたっぷりのヨルダンの塩）

＜作りかた＞
1.マコモダケは、繊維にそって縦にたんざく切り。ヒラタケは石づきを落すだけ。
2.油を熱し、天ぷら粉に野菜をさっとくぐらせて揚げる。

塩とレモンをお好みでつけてアツアツを食べる。マコモダケのなんともいえない甘さと心地よい触感。ヒラタケは天ぷらにするとジューシーな旨みを堪能できる。

おまけ・・・マコモダケには黒糖焼酎が良く合いました。水割りでどうぞ。焼酎は、鹿児島沖永良部島の黒糖焼酎「白ゆり」40度。
冷たいうどんに天ぷらをそえて、2度マコモダケを楽しみました。
