マルセイユ石けん ミントココア風味

料理の延長で始めた石けん作り。私にとって3度目となる今回はマルセイユ石けん。世界中でいい石けんの代名詞になっているのでご存知の方も多いと思う。72％の刻印がマルセイユ石けんの証と言われているが、これはオリーブオイルを72％含んでいるということ。オリーブオイル100％の石けんは天然のグリセリンを沢山含んでいて保湿力は抜群。だけどやっぱり泡立ちがいまいちでとろけやすく物足りないと感じてしまう。マルセイユ石けんはそんなオリーブ石けんの弱点をカバーしたスーパー石けん。残りの28％にココナッツ油とパーム油を使う。

基本の材料であるオイルと苛性ソーダ＆水の配合は、石けん作りのカリスマ前田京子さんのレシピ。
香りと色合い、効果は私なりにアレンジしている。今回は、大好きなミントチョコのアイスクリームをイメージして香りと色をつけ、おまけにスクラブ効果のあるカオリン（有田焼で有名な白磁の材料）まで入れて、ちょっと欲張りな冬用せっけんを目指します。

＜マルセイユ石けんの基本材料＞ ※前田京子さんのレシピによる
１． 苛性ソーダ83ｇ、 精製水250ｃｃ
２． オリーブオイル500ｃｃ、 パーム油70ｃｃ、ココナッツ油120ｃｃ

＜オプション材料＞※私のオリジナル
色のアレンジ・・・ココアパウダー小さじ２
スクラブ効果 ・・・カオリン大さじ１
香り付け・・・ベースノートとしてローズウッド25滴、 トップノートとして はっか油25滴

＜作りかた＞
１．すべての材料を計量する。パーム油とココナッツ油が固まっている場合は湯銭にかけ溶かす。

２．シンクの中で、ガラス瓶に入れた苛性ソーダに精製水を注ぎ入れ透明になるまですばやくかき混ぜる。温度は一気に60℃くらいまで上がる。

３．キッチンのカウンターで、3つのオイルを1つのボールに入れ、湯銭にかけ38度くらいに温める。

４．２と３の温度が38～40度になるよう調節する。苛性ソーダ液は水をはったボールに保冷剤を入れたりして容易に温度調整が可能。オイルは湯銭から出してからも温度が上昇するので、2℃ほど低めの時点で出すといい。両方の温度がぴたりと合ったところで、オイルの入ったボールに苛性ソーダ液を少しづつ混ぜながら入れ、20分間トングでできるだけ早くかき混ぜる。
石けん作りで一番のポイントは、温度を合わせることと、この20分間の撹拌を真面目にやることだと思う。

５．まるでホットケーキの種のよう。マルセイユ石けんの場合、型入れできる堅さになるまで16時間くらいかかる。時々かき混ぜてけん化を促しラップをかけておく。私の場合、石けんの仕込みは夕食前に行い、眠る前までかき混ぜて翌朝に型入れするというパターン。

６．とろりと絵が書ける堅さになったら、エッセンシャルオイル、カオリン、ココアパウダーを入れて混ぜ、お手製の牛乳パック型に型入れをする。見るからに美味しそうな色合い。

７．発砲スチロールに入れて保温。

８．固まったら、型から出して包丁でザクザクと好きな大きさに切り分けて木箱で乾燥させる。コールドプロセス法なのでじっくりと自然にけん化が進む。4週間の熟成期間を経て完成。

苛性ソーダは強アルカリ性なので、化学反応を起こしている間はマスクと耐久性のあるニトリルゴムのビニール手袋を必ず身につける。格好悪いと思ってマスクなしで仕込みをしていたら喉を痛めてしまったことがある。使用後のボールなどを洗うときも忘れずに。ボールは料理用と兼用しても全く問題ないが、気になる方は分けてもいいかも。石けん作りは危ないと思っていたけれど、お菓子作りよりはるかに簡単。オイルは食用グレードのものなので、余ったら料理に使える。また自分だけのレシピが生まれるのも楽しい。
道具やスーパーではちょっと手に入りにくい珍しいオイルは、前田京子さんの本から生まれた”お風呂の愉しみネットストア”で全て購入することができる。このショップがなかったら、私はきっと石けんを作っていない。

「マルセイユ石けん ミントココア風味」の使い心地は、切り分けてから4週間後の11月に報告したい。
